White Chocolate Matcha Cookie

256g Bread flour
1 tsp Baking soda
½ tsp Salt
3 tbsp Matcha powder
200g Unsalted butter
100g Granulated sugar
200g Light brown sugar
1 tsp Vanilla extract
1 Large egg, at room temperature
1 Egg yolk, at room temperature
170g White chocolate chips

Steps
Heat the
200g unsalted butter
over medium heat until it turns a golden yellow color. Pour butter in a heat proof bowl to cool. As the butter cools, it will get darker in color.
Combine
256g bread flour
,
1 tsp baking soda
,
½ tsp salt
, and
3 tbsp matcha powder
in a medium size mixing bowl. Mix well and set aside.
Add in
100g granulated sugar
and
200g light brown sugar
to your butter. Mix to combine. Once well combined, add in your
1 large egg
,
1 egg yolk
and
1 tsp vanilla extract
. Whisk until you get a light and creamy texture.
Pour into dry ingredients and mix together with a large spoon or spatula. The dough will be very soft, thick, and shiny.
Do not overmix.
Fold in the
170g white chocolate chips
. The chocolate chips may not stick to the dough because of the melted butter, but do your best to combine them.
Cover the dough tightly and refrigerate for at least 2 hours or up to 3 days.
Preheat oven to 175°C (347°F). Line large baking sheets with parchment paper or silicone baking mats. If the dough has chilled for longer than 2 hours, let it sit at room temperature for about 15 minutes.
Using a cookie scoop or measuring spoon, scoop 1/4 cup of the chilled cookie dough. Roll into a ball. Arrange the cookies 3 inches apart on the prepared baking sheets.
Bake the cookies for 12-14 min or until the edges are very lightly browned. The centers will look very soft, but the cookies will continue to set as they cool.
Cool on the baking sheet for 10 minutes before transferring to a cooling rack to cool completely. While the cookies are still warm, press a few more white chocolate chips into the tops.
